I know this isn’t normal, it’s like MexAsian but I’ve always liked the mixed up recipes. Like take this twist on nachos, Italian Nachos. Alfredo sauce may not be the norm for nachos but dang, they are so delicious!!! This teriyaki beef wrap is the same thing. Maybe you don’t find tortillas in the normal Asian cuisine, but they are wonderful carrying all of these wonderful veggies and saucy beef.

This recipe is actually made with all my fellow Moms out there and those who are are looking for something easy to make for 1 person or more in mind. First, I find it hard to pull meals together on my busy days. Suddenly it’s 5:00 and I haven’t even thought about grabbing meat out of the freezer or getting something cooking. Ugh, I hate that! Everyone is hungry, nothing really sounds good and everything is going to take too much work. Then there’s those who aren’t feeding multiple mouths. For example, if the husband and kids are ever gone or before I was married and the thought of making a huge meal for one person just made me cringe. It may be more work to have more to feed, but in some ways it’s easier than trying to think up dinner for 1 or 2.

That’s why this recipe is perfect. Quickly cook the meat on the stove top in it’s thin slices. Inanother pan add a little oil and butter and cook up the veggies. Add a little teriyaki sauce or cook up your own. Use day old rice or again, you can make it fresh, it only takes 20 minutes so even if you start late you can have dinner ready in no time. Wrap it all up in a tortilla and eat it up!

The best part? This can all be prepped whenever you want. I make the sauce, stick it in a jar, prep my veggies (wash and cut), make my rice and slice my meat. Then when I’m ready to make it I cook up the meat, reheat the sauce and add a little to my rice when I reheat so it isn’t dry and hard. Boom! Dinner is ready in no time. And thank goodness because I’m hungry!

It depends on the soy sauce that is used to make teriyaki.

Some soy sauce has gluten in it.

If the teriyaki sauce is made with gluten free soy sauce, then teriyaki is gluten free.

Description

Maybe you don't find tortillas in the normal Asian cuisine, but they are wonderful carrying all of these wonderful veggies and saucy beef.

Ingredients

For the Wrap

  • 4 Cups Stir Fry Veggies, we buy fresh broccoli, snow peas, carrots etc but you could use frozen
  • 2 Cups Cooked Rice
  • 2 Pounds Flank Steak, sliced very thin
  • Fresh Tortillas, cooked
  • Sesame Seeds , optional

Teriyaki Sauce

  • 3/4 Cup Low Sodium Soy Sauce
  • 1/2 Cup Water
  • 1/3 Cup Brown Sugar
  • 1 Tablespoon Honey
  • 3/4 teaspoon Ground Ginger
  • 1 teaspoon Sesame Oil
  • 1 Small Garlic Clove, minced fine
  • 2 Tablespoons Cold Water
  • 2 Tablespoons Cornstarch

Instructions

For the Teriyaki

  • In a medium saucepan, stir together the soy sauce, water, brown sugar, honey, ground ginger, sesame oil, and garlic.

    3/4 Cup Low Sodium Soy Sauce, 1/2 Cup Water, 1/3 Cup Brown Sugar, 1 Tablespoon Honey, 3/4 teaspoon Ground Ginger, 1 teaspoon Sesame Oil, 1 Small Garlic Clove

  • Bring to a boil and cook for 1 minute.

  • In a small bowl, stir together the water and cornstarch.

    2 Tablespoons Cold Water, 2 Tablespoons Cornstarch

  • Add 1 teaspoon of the hot soy mixture to the cornstarch mixture and then slowly pour everything into the boiling soy mixture, whisking until it begins to thicken.

  • Set aside.

For the Wrap

  • Heat a skillet over medium high heat and cook the meat until almost well done, about 2 minutes.

  • Meanwhile, add a drizzle of olive oil and about 2 teaspoons of butter to a pan over medium heat and saute the veggies until tender.

    4 Cups Stir Fry Veggies

  • Place a little rice, meat and veggies on a tortilla, top with sauce and sesame seeds if you choose, roll it up and enjoy!

    2 Pounds Flank Steak, 2 Cups Cooked Rice, Fresh Tortillas, Sesame Seeds
